CAP’N CRUNCH CHICKEN

The afternoon slowed down a bit in the last hour. I think I just had worked and planned quite well during the day, so the last hour wasn’t too bad. I still got to leave at 5, which I was very surprised by!

Headed back to the gym and I was already hungry before I worked out. I told myself if I pushed it, that I could get a smoothie at the gym when I left. (Don’t they say you shouldn’t bribe yourself with food? ;) )

Workout
I used 2 of each free weight for each exercise: 20lbs for chest, 17.5lbs for shoulders, 15lbs for arms and 10lbs for legs. Each exercise was 3 sets with 10 reps per set (okay, the third set may have had some 8s)

After getting my stuff, I went and looked at the smoothie bar and the smallest size they had that was still healthy (not full of chocolate, peanut butter or ice cream, which yes, would have been yum, but not really post-workout food) was a 16oz. Are they INSANE??! I wouldn’t be able to eat dinner if I consumed a 16 ounce smoothie this late in the day. So I walked over to the vending machines and got myself a Black Cherry Almond clif bar. It was only $2.00 compared to the $4.99 smoothies, so I see this as an all around good choice.

And I only ate half of it on the ride home:

When I got home and started making dinner, I decided to have a handful of these yummy bunnies.

Dinner was a recipe that I just kind of made up. I soaked chicken breast in buttermilk. Okay, actually, I just took skim milk and added some lemon juice to it, but close enough. I let that soak for about 45 minutes. I crushed up some fiber one, wild animal crunch and cinnamon toast crunch in a big freezer bag, then I put in the chicken and shook to coat. The cereal choices were because I had run out of fiber one and need something else. The sweetness actually went really well with the chicken. Has anyone ever had Planet Hollywood’s Cap n’ crunch chicken? I haven’t had this in YEARS but I remember it as being very tasty, and that was what I was remembering when I put the sweet cereal into the bag. I steamed up some broccoli and baked some red potato wedges with a little soybean oil. I put about 1T of parmesan cheese on the broccoli and some parsley on the potatoes.

After being worried that the chicken would come out disgusting, dinner was a pleasant surprise. Oh yeah, and I added about 1T of ketchup for my potatoes.

I actually went back and had about 4 more potato wedges. Mmm good.

I probably will have a snack later on. Something dairy and fruit related. My legs are already a little sore. I really should do abs tonight, but I can just tell I am worn out.

Tomatoes Galore

Just like expected, the morning has FLOWN by.   Means I have been up and down and moving around all day so far, which can only be a good thing.  As expected, the peach wasn’t quite ripe.  Still a little tough.

Workout

Went to the gym over lunch.  I did 40 minutes on the Precor elliptical at an incline 3.0 at level 6.  I held a heart rate between 150-160 for the whole time with my max being 163.  I am planning on heading back to the gym after work to lift today because with the holiday week, I just don’t know much working out I’ll be able to squeeze in and well–we all know there will be a little added food consumption (and possible alcohol) come Friday!

Lunch

Lunch was good, but a bit strange.  I had a whole wheat tortilla with about 2 leaves of romaine lettuce, about 1T of olive oil mayo, some cherry tomatoes and celery.  On top I sliced up a hardboiled egg.  I may have used 25% of the yoke but all of the whites.  It ended up being very tasty.

I also cut up some cherry tomatoes with red onions, more celery, red bell pepper, some sprinkles of left over goat cheese and balsamic vinegar to marinate all morning.  It was good but could have used some herbs.  I have a ton at cilantro at home right now that would have been really good in this and some fresh ground pepper.

And then there is my customary wegmans sugar-free pudding (figured we didn’t need a photo) and a diet cherry pepsi.  Tomorrow will be my first soda-free day.  I think I am prepared.

Hopefully this afternoon will go as quickly as this morning.  Here is the planned PM snack:

 

A bunch of cut up vegetables (celery, carrots and zucchini) and 1/2 cup of cottage cheese.  It’ll have to power me through my gym work out.  Two a days are a bit tough!

Feeling ‘healthy’ fried chicken tonight. mmmm.:)

Just another manic monday

Got to love when Monday morning also is the last day of the Quarter.  Today is going to be a bear!  And I am still slightly sore from this weekend and my stomach is only feeling about 50%.  This week is going to fly by.  I have a big meeting Wednesday morning, which will take most of the beginning of this week to prepare for and then it’ll be Thursday and July 4th before I know it!  We don’t really have big July 4th plans yet.  Living right near DC means you either a.) brave it and head towards the district with 18 million other people or b.) you hide out in your little suburb.  We may be opting for b this year.  I know Thursday night Missy and I are heading out for drinks to kick off the long holiday weekend.

I was so excited to have my normal breakfast back this morning.  With how humid it was this morning, you would think I would want something cold, but no…this was fabulous.  Oats, blueberries, flax seed, a splash of soy milk, all-bran and I went for something new….shredded coconut on top.  It was perfect! Not too much to give it an overbearing coconut flavor, but just enough to add a surprising sweetness.  Yumyum.

AM snack today:

Kefir and a peach.  This peach seemed iffy this morning.  Not quite ripe enough, still a tad tough, but we will see.  And time for me to work my little butt off!

Weekend Recap

This weekend was great.  Too bad I have to go back to work tomorrow!! 

 

After our bike ride yesterday (15.5 miles), I got back and had a banana with peanut butter and then got a shower and we drove down to Ocean City to have lunch at the restaurant my little brother-in-law is serving at for the summer. 

 

 

 

At Micky Fin’s, I had a Pama-lemonade which was lemonade, raspberry vodka and grenadine.  Quite refreshing.  I ordered the Martha’s Vineyard salad with blackened tuna.  It was a normal salad with raisins, blue cheese and pine nuts.  I ate about 75% of the salad and almost none of the tuna.  Seeing we were enjoying sitting outside during the day, we decided to each get another cocktail.  I had a mojito.  Also very tasty!

 

 

 

 

We got back to the beach house and decided to go out on the boat for awhile.  Everyone else went wakeboarding but I could only go tubing due to the knee.  But tubing with us isn’t easy and relaxing.  It is drive as fast as possible, aim to get air and hope to survive.  We like extreme.  Needless to say, I am SORE today, especially my arms!

 

We got back to the house and my in laws had gone to the store and just had TONS of fresh produce.  Dinner was tossed salad, tomatoes, cucumbers and onions in a vinaigrette, salmon, steak, corn, red potatoes, watermelon and bread.  It was so good and fresh.  I had one little red potatoes, half an ear of (plain) corn, about 2 ounces each of steak and salmon, and some salad and tomatoes mixture.  We ended up sitting at the table for hours and I ate about 3 pieces of bread and a lot of watermelon of that time.  Also, there was quite a bit of wined consumed over those hours….I may have had 4 glasses of wine. 

 

We played some yahtzee and I had some peanut butter ice cream.  At least it was light.  When you mix peanut butter into ice cream, I cannot say no!

 

Also over the course of the weekend, I had more of each of these than I want to admit (probably 4 of the sugar babies and no idea about the worms.)

 

 

 

Today was similar to yesterday. Everyone else had French toast, hash browns, sausage and bacon. I got up and had oats, flax seed, cinnamon and blueberries.  I beat one egg white up and added it but when I cooked it they came out in clumps.  I will be ready to have my ‘real egg whites’ out of the carton I get home!  It still was missing something, so I mixed in about 2T of peanuts.  That didn’t really help at all.  Still missing something.  But I ate it and moved on.

 

Justin and I went for another 15.5 mile bike ride (his heart rate monitor said he burned 900 calories, so I probably burned about 600—must get my HRM fixed!!) It was tough with an INSANE headwind!  Glad to just finish it. 

 

Ad lunch when we got home.  I had some plain bag salad with blueberries on top, a piece of whole wheat bread, toasted with hummus on top and some cottage cheese with dried fruit.  After that we went to the pool and laid out for awhile.

 

When I got back I had an oreo.  I felt spoiled.

Got home tonight and I wasn’t too hungry.  Anytime my schedule is thrown off or I don’t really have total control over what I eat, my stomach just doesn’t do well.  So tonight I had some tropical fruit with fage on top.  A bit of honey on top with some all-bran and flax seed.  I had a homemade whole wheat/fruit muffin that I keep in the freezer and a small glass of kefir. 

 

 

 

 

 

 

 

 

It was a fun weekend.  I definitely think I probably overdid it on the sweets and alcohol this weekend.  I just haven’t figured out how to cut back on my wine drinking when my glass keeps getting filled before I have finished it.  And when I don’t have my normal food around, I tend to have cravings….for sweets, which is unlike me.

 

I went grocery shopping after getting home, and I must say, nothing I put into my cart had high fructose corn syrup, which made me feel proud!

 

Hopefully I can sleep after taking a 2 hour nap in the car ride home….and hopefully my stomach will be back to normal by morning.

MMM, salt air

I have no photos to post so far.

I left work last night and went by this fabulous new wine store.  I loved it.  The guys that own it are in their early thirties and weren’t preteniousat all.  It was all moderately priced wine.  They had a huge tasting room and have about 6 different wines to taste with the theme of “Fourth of July”.  So all American made wines.  We tasted about an ounce each of a pinot gris, a chardonnay, a rose, a Zinfandelblend, something called the Fruit Bomb (with a firecracker on the label to fit the 4th theme) and a cab sav.  They were all really tasty and the guy (James) that lead us through all the wines was so knowledgeful and interesting.  We ended up buying a bottle of the pinot and the zinfindelblend.  They also had cheese tastings.  Yum!  I tasted a triple cream brie (melted in your mouth) and a 15 month gouda.  The little bit of crystals/crunch in the gouda was to die for. 

Then headed home and packed.  I grabbed a handful of Annie’s Whole Wheat Chocolate Chip Bunny Grahams and some dried mixed fruit.  We ended up deciding to car pool with my father-in-law for means of saving gas.  I hated putting our bike rack on the back of his nice lexus!!  Then we headed out into the rain. 

We stopped at Elevation Burgerfor dinner.  I got the veggie burger  (taste like vegetables) with lettuce, tomato, caramlized onions and ‘elevation sauce’ and then we split 2 orders of fries between the three of us.  I LOVED the veggie burger.  I loved that I could see actual whole peas and corn and big slices of carrots in there!  Shamefully enough, I am sure that I had my 1/3 of the fries.  They were tasty and are cooked in olive oil.  Yumyum.

Continued on the ride to the beach.  I snacked on a handful of dried fruit at one point and then when we got to the beach house I had A glass of pinot, a handful of cajun nuts and about 10 Tostidos tortilla chips.

 

Slept wonderful last night but woke up with some stomach problems.  Who knows why.  Hopefully it will pass soon!!

For breakfast, I had my oatmeal withflax seed, cinnamon and blueberries. My mother in law made fried eggs, bacon, sausage, and toast.  I walked over and opened my little cooler of food I brought with me (under the stipulation that I threw a bunch of stuff in that would go bad at home this weekend and I didn’t want to waste it) and pulled out my pre-mixed oats, flax seed and cinnamon.  It is a bit tough and weird watching everyone else eat eggs, bacon and toast and I have my bowl of oatmeal.  It does help that I don’t even really enjoy those foods (I really am not a huge pig fan) and I know that they would make me feel pretty crappy afterwards.  On top of my oatmeal I mixed in about 1/2T of peanut butter (icky chemically Jiff!).  I tasted it and it was just watery and wasn’t very good.  I think it missed it’s eggs and yogurt.  I added a little bit of all natural butter (about 1/2tsp) to try to give it a little more flavor.  Not sure if it worked.  I had a slice of cantelope and about 1/2 cup of V8.

I am waiting for Justin to get back from the bike shop because we left my spare bike tube at home.  We bought it yesterday because I got a flat last week on our ride.  Then we left it at home. :)   Anyway, then we will head out.  It is already about 80 some degrees so I would like to get out soon.  We will probably ride for one hour-one and a half hours.  I love riding at the flat beach!!

About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
