July has not started out all that swell

Today has lived up to every expectation I had for it….overwhelmingly busy. This may be a little too much information, but have you ever had one of those days were you are so busy that you forget to go to the bathroom? Not that you forget, but that your body just knows better than interrupting you, despite the fact that you are drinking copious amounts of tea and water? Well that was me today….6 hours later and I never had gone. Weird, I know, but that is how I really rate an insane day! :)

But at least I still managed to sneak away to the gym over my ‘lunch break’!

Workout
Went to the gym over lunch and worked out on the treadmill. I did the longest jog/walk that I have done to date since the injury. I did intervals at walk 5 minutes at incline 8.0 at rate 3.9 and then I jogged at 5.2 with incline 0.0 for 5 minutes. I did four sets of these for a total of 40 minutes. It felt really good. I was actually planning on only doing 20 minutes on the treadmill and then switch to the stairmaster for another 20, but I felt so good I decided to stick it out. My quads are definitely tight tonight and I really need to stretch this evening.

Lunch
My lunch was a whole wheat tortilla with lettuce, carrots, red bell peppers and maybe two tablespoons of hummus. So so tasty!

I then had a salad with arugula (love the spiciness!!), onions, zucchini, raisins, tomatoes and I threw on a hard boiled egg for some protein. I switched up from the pudding today and had a kozy shack sugar-free tapioca. I forgot to take a picture of it. Yes, I know, it is sweetened with splenda, so that doesn’t really help with my no artificial sweetener thing, but oh well. I did manage to go all day without a soda though!!!

My afternoon was so busy that I didn’t even think to have my afternoon snack until 5:45, but good thing I had it because I didn’t leave work until 6:45, so it was a late dinner! My snack was ½ cup of cottage cheese with 2T of dried fruit on top. It hit the spot for the moment but I think it only heightened my sweet tooth.

On the way out of work, one of my coworkers was a lifesaver and had some candy in a dish. Nothing like a York peppermint patty to come through in the late night at the office clutch.

I got home and decided to have a glass of wine from a bottle I have been working on for a week now. This was the last little bit. I always forget to sip the glass while I cook though but it does keep me from snack on foods while I am cooking.

Dinner
So we sat down for dinner and I took these pictures:

Then my cell phone rang and I went to grab it to turn off the ringing (rude to answer during dinner!). It was one of my older sisters. Anyway, when I went to grab it, I some how sliced my hand open really badly on the glass that covers the table. (Don’t worry, no photos of that!!!)  I have no idea how I did it. Needless to say (this may gross some people out) but I left a noticeable chunk of my hand on the table. Justin quickly bandaged me up (glad to have an Eagle Scout in the house) so that we could wait a bit before figuring out what to do. We figured I had lost too much skin for stitches so now we have just bandaged me up. And I have a major meeting tomorrow morning with the president of my company and I have my dominate hand all taped up.

I lost my appetite really quickly obviously. Good thing I had that wine to sip on. After about an hour I finally decided to eat. Dinner was really good, which was nice because I kept thinking about just having a bowl of oats or cereal for dinner. Something warm, creamy and comforting.

Dinner was more arugula with avocado, some freshly steamed corn and cherry tomatoes. I put some blue cheese dressing on top. I made some whole wheat rotini with apple and jalapeno chicken sausage, red bell peppers, onions, zucchini and squash ribbons, fresh basil and cilantro and some soybean oil. It was really fresh and clean tasting. On the side, I had ¼ of a mini 100% whole wheat Boboli pizza crust just toasted. We had one in the fridge that was probably going to go bad soon, so I figured why not.

Now I am watching Hell’s Kitchen and trying to calm down from a hellish day at work and the hand injury. Ugh, Justin may have to wash my hair for me tomorrow. Wonder if I can pull off the one handed shower….

Why couldn’t they have waited until the weekend to paint at work?

For reasons of full disclosure.  Here are the evening snacks I had:

A frozen banana with fage, honey and some natural PB. 


And after I finished that, I decided I hadn’t had my peanut butter fix, so I had a little chocolate square with some more PB.  Sadly enough, this didn’t hit the spot and I decided to just brush my teeth and get ready for bed instead of keep feeding the empty pit I like to call my stomach.

I woke up this morning, showered and packed my lunch and I was STARVING by the time I had breakfast.  That never ever happens to me on a weekday.

Breakfast
I switched things up a little bit this morning.  I had 1/2 cup of oats with water, blueberries and 1/4 cup of liquid egg whites.  Cooked that for about 2 minutes and 15 seconds.  Then let it cool while I finished getting ready for work.  I topped it off with about 1T of flaxseed, some raisins, some Wild Animal Crunch and here was the change of pace–a T of apple butter.  mmmm, I love apple butter.  I wish I remembered to eat it more often.  Justin likes it on cottage cheese, but I have never tried that.  Those two flavors just don’t seem like they would blend well.

AM Snack
Graham Crackers and Kefir

The floor I am on at my office is getting painted this week and the fumes are horrendous.  I can already feel a mild headache setting in.  At some point today I may decide to work from home.  We will see.  I am SO SO SO busy until tomorrow morning that I just don’t know if I can work from home but I need to be productive and these fumes aren’t helping.




Summary



About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
