Luckily this evening has gone a lot better than last night!! I did have another cup of iced coffee and soy milk at work. I put 1tsp of real sugar into it. It definitely tasted better with real sugar instead of Equal. Finished up at work around 5 and headed home. Justin left tonight until Friday morning to go tuna fishing with his dad and brother. Hopefully he will bring home some fresh tuna steaks for July 4th!!
When I got home, I had a little nibble because my stomach was growling. Just some Wild Animal Crunch, some dried fruit and a few chocolate chip cookies. It was just the right amount to hold me over for a few hours.
Dinner
After Justin left I started deciding on dinner. I usually try to take advantage of nights he isn’t home to make meals that he wouldn’t like. Which typically means anything (other than sushi) that is Asian cuisine. Don’t ask…apparently he had a bad experience as a child.
Yes, I ate my dinner on a tv tray tonight.

I started with some shirataki noodles that I have had in the fridge for a little while. For a few weeks/months I felt like I was living off these things. They are a little funk and I know some people hate them, but if you cook them correctly, they taste pretty good. Nice replacement for pasta (and only 20 calories per serving!!) So I washed, cut and dried the noodles. In a pan, I sautéed about 1 clove of garlic, a slice of red onion, ¼ of a carrot, ¼ of a bell pepper, ¼ of a squash and about 2T of green peas (it need some green in it!). In a separate dish, I combined about 1 ¼ T of natural peanut butter with equal amounts of water, 1 tsp of low sodium soy sauce, some ginger and a squirt of Sriracha. I stirred really well and microwaved for 30 seconds. I combined the noodles, veggies and peanut sauce all together.
I am sure this combination sounds a bit weird, but I love the spiciness of the noodle dish with the sweetness of the chicken salad. I took a 3.5 ounce chicken breast and baked it until done. I chopped it up and mixed it with 1T of reduced fat olive oil mayo, 1tsp of clove honey, 1tsp of Dijon mustard, about 10 raisins, 3T of celery, a slice of red onion, 1/2T of pine nuts and some s&p. I served spooned this onto 4 small romaine lettuce leaves.
Sweet, creamy and crunchy. The trifecta!
Currently I am watching the US Olympic Swimming Trials. This is what I have been doing all week at 8PM. I cannot wait until the Olympics and I am BEYOND obsessed with swimming. I guess those 15 years of swimming competitive kind of got me hooked. At least I’ll have the Tour de France to hold me over this month until the Olympics begin.
I do need to motivate tonight. There is a chance that my mom is coming tomorrow night (I hope so!) and I need to clean up the kitchen and the guest bedroom. Otherwise, she is not coming up until Saturday morning, but I know I won’t want to waste July 4th cleaning up my house, so it will be worth to do my chores tonight. I sound like a little kid.

Dessert
Cleaned the house. Mopped the floor and dusted. I feel quite accomplished. So I had a little night time snack. Fruit (mixed tropical fruit and half a banana), fage, honey, about 2T of oats, and about 10 chocolate chips:
