Sweet and Spicy

Luckily this evening has gone a lot better than last night!! I did have another cup of iced coffee and soy milk at work. I put 1tsp of real sugar into it. It definitely tasted better with real sugar instead of Equal. Finished up at work around 5 and headed home. Justin left tonight until Friday morning to go tuna fishing with his dad and brother. Hopefully he will bring home some fresh tuna steaks for July 4th!!

When I got home, I had a little nibble because my stomach was growling. Just some Wild Animal Crunch, some dried fruit and a few chocolate chip cookies. It was just the right amount to hold me over for a few hours.

Dinner

After Justin left I started deciding on dinner. I usually try to take advantage of nights he isn’t home to make meals that he wouldn’t like. Which typically means anything (other than sushi) that is Asian cuisine. Don’t ask…apparently he had a bad experience as a child.

Yes, I ate my dinner on a tv tray tonight. ;)   That is a salad plate with the chicken salad on it.

I started with some shirataki noodles that I have had in the fridge for a little while. For a few weeks/months I felt like I was living off these things. They are a little funk and I know some people hate them, but if you cook them correctly, they taste pretty good. Nice replacement for pasta (and only 20 calories per serving!!) So I washed, cut and dried the noodles. In a pan, I sautéed about 1 clove of garlic, a slice of red onion, ¼ of a carrot, ¼ of a bell pepper, ¼ of a squash and about 2T of green peas (it need some green in it!). In a separate dish, I combined about 1 ¼ T of natural peanut butter with equal amounts of water, 1 tsp of low sodium soy sauce, some ginger and a squirt of Sriracha. I stirred really well and microwaved for 30 seconds. I combined the noodles, veggies and peanut sauce all together.

I am sure this combination sounds a bit weird, but I love the spiciness of the noodle dish with the sweetness of the chicken salad. I took a 3.5 ounce chicken breast and baked it until done. I chopped it up and mixed it with 1T of reduced fat olive oil mayo, 1tsp of clove honey, 1tsp of Dijon mustard, about 10 raisins, 3T of celery, a slice of red onion, 1/2T of pine nuts and some s&p. I served spooned this onto 4 small romaine lettuce leaves.

Sweet, creamy and crunchy. The trifecta!

Currently I am watching the US Olympic Swimming Trials. This is what I have been doing all week at 8PM. I cannot wait until the Olympics and I am BEYOND obsessed with swimming. I guess those 15 years of swimming competitive kind of got me hooked. At least I’ll have the Tour de France to hold me over this month until the Olympics begin.

I do need to motivate tonight. There is a chance that my mom is coming tomorrow night (I hope so!) and I need to clean up the kitchen and the guest bedroom. Otherwise, she is not coming up until Saturday morning, but I know I won’t want to waste July 4th cleaning up my house, so it will be worth to do my chores tonight. I sound like a little kid. :)

Dessert

Cleaned the house.  Mopped the floor and dusted.  I feel quite accomplished.  So I had a little night time snack.  Fruit (mixed tropical fruit and half a banana), fage, honey, about 2T of oats, and about 10 chocolate chips:

Time to get some MUCH needed sleep!

Retail Therapy

Survived the day so far. The morning actually went pretty quickly. I did have one cup of iced coffee with soy milk and some equal (ugh! But that is all we have at the office other than NutraSweet. I may think about doing straight sugar but the calorie conscious side of my brain says no, no, no. Yet the healthy, don’t eat unnecessary chemicals says go for the pure sugar.)
And to make things worse, it is Wednesday, therefore, my diet cherry Pepsi day. And I am enjoying every sip of this caffeinated, carbonated beverage.

After such a trying 24+ hours and not being able to go to the gym, I decided there was only one thing that would make my lunch break happy. S-h-o-p-p-i-n-g. I’ll admit that I do medicate through retail therapy at times. I wanted a sundress to wear this weekend. We (Justin, me and my mother) are going to the AT&T National Golf Tournament on Saturday. It is also known as the Tiger Tournament, but due to his knee injury, he won’t be there this year. I guess I can forgive someone for having to miss out on commitments due to a major knee injury, seeing I did it for 15 months. Anyway, it is supposed to be pretty hot and humid. We went last year and ROASTED. So I thought a purchase of a cute little white sundress was needed. And the one I liked the most was on a MAJOR sale. SCORE! The only downfall is that it is a halter top and all the bathing suits I have been wearing so far this year have been halter tops, therefore I am getting major tan lines and this Saturday would have been a nice day to work on that.

Because the dress was so (almost shamefully) cheap and I had already decided how much money I was allowed to spend, I thought I would treat Justin to a little ‘something’. I don’t think Justin reads my blog (he knows about it) but if for some reason you do Justin, STOP READING NOW! :)

He has been really overworked lately and I have been a bit crabby for the past few weeks. And add a late night ER trip last night, I figured he was due an ‘I really appreciate all you do for me’ present. He is leaving tonight to go Tuna fishing with his dad and brother until July 4th on his dad’s boat. So I figured a new pair of boat shoes would be a nice surprise. I don’t think he has gotten new ones since high school and that pair has seen one (or maybe a hundred) too many nights at a dirty bar.

Enough babbling. On to the food!

Lunch
Lunch was almost an exact repeat of yesterday’s (except for the fabulous inclusion of my diet cherry pepsi!). I had a whole wheat tortilla with about 1T of Tribe 40 Spices Hummus with about ¼ of a carrot, ½ a piece of celery, 2T of red bell pepper and about ¼ of a squash all sliced up on top. The crunch of this wrap was amazing, even after being made 6 hours earlier, it wasn’t soggy at all.

Because I have so many tomatoes right now that seem to be getting to the end of their ripeness, I figured I would chop up a few and throw in some red onion, more celery and red bell pepper into a container. I also added some fresh cilantro and balsamic vinegar. Tangy and sweet all at the same time.

And my other side, the kozy shack no sugar added tapioca pudding.

To be honest, I am lacking in productivity at work this afternoon. I really do need to buckle down and focus. I keep telling myself I can go straight home after work and take a nap, hopefully that will keep me going.

Same as yesterday-1/2 cup of cottage cheese with 20g of dried fruit on top.

In desperate need of sleep

I think I got about 2 hours of sleep last night, max.  After a few hours of not being able to stop my hand from bleeding, we decided to make an ER trip.  We probably would have done an urgent care center but we don’t have any nearby that are open 24-7.  Obviously that whole event took way too long.  Like we had already figured out, I had taken off too much skin to get stitches so they cleaned it (oh my god I don’t have words for that!!!), patched it back up and put me on antibiotics.  Luckily my tetanus shot is up to date; otherwise they were going to give me one of those.  I barely slept at all last night because it just throbbed. 

I did decide to have a Skinny Cow Mint Skinny Dipper when I got home from the hospital, just because well, I wanted it.

Woke up and awkwardly showered and got dressed.  Made my lunch.  I went as simple as possible because I just didn’t have the mental or physical ability to think of anything new.

Breakfast

It was almost the same as yesterday, except I left out the cinnamon.  It tasted different but I don’t think I really missed it.  Tasted a bit creamier without it. 

Oats, liquid egg whites, blueberries, water, flaxseed, some raisins, apple butter and a handful of Wild Animal Crunch on top. 

Yummyyummy.

I ran out of my GFI sugar-free this morning.  Oh the horrors.  And of all days, I really need my caffeine.  I brought in some soy milk with me so I can make some iced coffee at work to help me through the morning.  I may need to step out for a Starbucks run over lunch. 

AM Snack

Simple.  Kefir and a plum.

 

I am skipping the gym today.  I needed a day off anyway, I haven’t taken a day off since last Tuesday and my hand obviously can’t handle lifting weights or really much of any rapid movement.  Hopefully I’ll be able to put some pressure to it by tomorrow.

Had my major meeting this morning that I have been killing myself for all week and it went well.  Hopefully the rest of the day will be normal and easy.




Summary



About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
