Crazy crazy 24 hours!!! I left work around 3PM and went to Whole Foods because I needed some whole wheat flour. I ended up wandering around too long and decided to just get a box mix. I was amazed to find whole wheat cake mix! And my mother called while I was there and said that she was leaving Blacksburg and coming up instead of waiting until Saturday.
I also picked up some more Fage and soy milk. Came home and got the cupcakes into the oven (I mixed in some sprinkles because Justin LOVES Pillsbury Funfetti Cupcakes/icing and I just wanted something a little more healthy.) I used egg white substitute for the eggs portion and light soy milk instead of regular milk.
Then I made icing out of cream cheese (fat free), powdered sugar, a splash of milk, a splash of cointreau and about 1tsp of lemon rind. Separated it into 3 little dishes so I could color it and made them quite patriotic.
Then I dyed my hair (came out pretty good!) and had a little snack of cinnamon toast crunch (oh tasty!), annie’s chocolate chip bunnies, chocolate chips and some dried fruit. I also had half a cupcake.
And headed over to the metro, met up with Missy and headed to Cantina Marina. I love love love this place. It is out on a dock with a gazebo and has tasty drinks. Just a perfect place on a summer night to go relax and the weather was just right last night, not too hot and not humid.
Warning-there was quite a bit of alcohol consumed.
I started with this:

Then I switched over to what Missy was drinking-Blueberry Stoli with sprite. (it is the drink in the top of that photo.) I heart blueberry stoli.
After those two, I decided I didn’t need any more hard liquor and switched over to the bar’s drink of the night.
Red Stripe. I had two of these.
Missy and I split dinner. Baked chicken breast with avocado and sprouts. And homemade kettle chips.
Then my mom called and said she was close, so we metro’ed back to VA and met up with my mom in Clarendon and went to a restaurant 3. Right after sitting down, three guys (all probably in their early thirties) walked by that were a bit chatty and all three of us were witty and chatty and started bantering back. The guys ended up pulling up chairs and staying for the night. I kept asking why they would want to spend their evening with a 60+ year old widow, a married 27 year old and another 27 year old that is in a relationship. Bit weird, but I think they were just real friendly and we all had a BLAST with them. Some how time really got away from us and it was last call. I had my 62 year old mom out until last call.
The guys were buying our wine all night and I don’t really know how much I drank. My glass never got empty so I wasn’t able to count.
Needless to say, I felt like a train ran over me when I woke up this morning. I finally thought I needed some food and went upstairs and made myself an egg sandwich. I used the other half of the Ezekiel sprouted wheat bun, one egg and about 1T of olive oil mayo. It hit the hung-over spot and helped.
I still wasn’t too hunger all day and had about ¼ of a sandwich that Justin had gone and picked up. It maybe was 3 inches. It was a Philly cheesesteak. Gooey and greasy enough for my weak stomach. I honestly don’t know the last time I let myself eat a sandwich like this….mayo, cheese, etc. It was really quite good but obviously not something I need to eat all that often.
Then we took my mom out to the house, which she loved and went to Wegmans to get stuff for tonight. I heart you Wegmans!
Now we are heading out to Iwo Jima to watch the national fireworks. And I am staying sober! I just had a handful of these to hold me over:
