Completely Satisfied

The afternoon went quickly.  This whole week has gone quickly.  I can’t believe tomorrow is already Friday. 

Oh and yes, that peach was amazing.  So juicy I needed a napkin. MMMM, nothing like a perfect peach.

Workout #2
I picked this workout because I thought it seemed pretty easy.  I haven’t been in a pool for months so I thought it would be a good way to ease back into pool workouts.  Ummmm, I think my arms almost fell off in the pool.  Here is the workout.

My upper body definitely was tired after that last set.

On the car ride home I had half a clif bar (chocolate chip flavor.)  I honestly think this is my favorite flavor so far.  Sweet but not artificially or overbearing.  Almost tasted like chocolate chip mixed with some raisins.

Dinner
I coated four 4 ounce cuts of eye round with this Pampered Chef Jamaican Jerk Rub.  I actually didn’t love the rub on the steak.  I think it would be better on chicken or a mild white fish.  Anyway, I cooked these on a very hot non-stick frying pan for about 3 minutes a side (the steaks were about 1 inch thick).  I actually think they could have been cooked less, but they were at least still moist and tender.

Then I steamed a whole slew of vegetables together.  The corn from one ear, 2 carrots, 1/2 zucchini, 1/2 squash and some red onion.  I served this with a homemade cucumber dressing.  For the dressing, I mixed together about 3T of fage yogurt with half of a deseeded cucumber chopped very finely.  Then I added a sprinkle of paprika, salt and pepper.  I decided it was too sweet so I put in a few tops of lime juice (I am out of lemon juice.  More than anything it just need some sort of acidity.) 

Lastly, I sliced up 4 red skin potatoes into eights.  I cooked these at 350 degrees for almost an hour.  I served them with a sprinkle of fresh parmesan cheese, salt and pepper.

I had about 1 1/2 red skin potatoes, 3 ounces of steak and about a cup of veggies with the cucumber dressing on top. 

It was definitely good and satisfying because I feel stuffed right now.  Justin and I are going to get things ready for the yard sale (price things, put clothes on hangers, etc.) and then making ourselves do abs.  I am feeling Kendall’s rock solid abs tonight!

Then I am sure I will have an evening snack.  I am all out of fage now which has been my go to lately.  Guess you will just have to wait and see.

Sweaty but Strong

Would it seem excessive if I bought this fan to offset my ‘no-AC summer’?

Probably so.  And seeing this bad boy only cost the low price of $549.99….probably eliminates the not using AC so that we can have lower electricity bills justification.

Alas I digress….

Morning went quickly.  It’ll be Friday before we know it!! I have a toga party that Missy is throwing tomorrow night.  With prize categories for costumes.  I need to think about my toga tonight.

Workout #1
Switched up the schedule today and lifted over lunch.  I lifted only upper body because my knee is just swollen and sore. I know I need to respect it and the injury, so I am listening to it telling me to take it easy.

Then I stretched my legs for awhile.  I should try and stretch again tonight because they felt a bit better afterwards.  I also stretched my upper body.  I feel like I did more upper body exercises, but I guess that is it.

Lunch
Today wasn’t original at all.  It actually is the EXACT same meal from yesterday, except I had more carrots because they were so yummy yesterday.  I don’t know if I don’t want to put a lot of hummus on each dip because I want to save it to make sure each bite gets some, but I have been noticing that I end up with a pile of hummus left and no veggies remaining. :(   I do wish I had brought more cucumbers today.

That is 1 carrot, 4 broccoli florets, 2 cucumber slices and about 1.5T of Tribe Hummus. (sorry about the terrible photo!)

My sandwich was the same as yesterday too.  2 slices of 100% whole wheat bread, 2 smears (about 1T) of reduced fat olive oil mayo, some arugula (it was the last of my arugula too. :( ), a hardboiled egg white (eliminated the yolk), some tomato slices and some S&P.

I’ll try to come up with something a bit more original tomorrow.  And hopefully my stomach won’t hurt this afternoon like it did yesterday.  If so, I will blame one of the two of these as the culprit.

I also have my Kozy Shack no-sugar added tapioca and a Cherry Coke Zero.

I have some meetings this afternoon so hopefully the day will go quickly.  Then back to the gym for a little swim.

1/2 cup of cottage cheese and a peach.  I figured I would switch it up a bit and added some fresh fruit.  And this peach is perfectly ripe. I can’t wait to taste it!!

Oh why can’t I get a summer break like school children?

Look at this stunning orchid I have growing in my house.  It makes me happy to look at, so I thought I would share it.  Just amazed by the perfection in its beauty.

It is gorgeous outside.  About 70 degrees and mostly sunny, lower humidity.  How I wish I could have played hooky and enjoyed the day outside!  I did pack my bathing suit so I can go swim for my cardio today after work.  Today is the first day in ages that it hasn’t been supposed to rain at night, so I thought I would take advantage of it.  I can’t swim over lunch because there just isn’t enough time to workout, shower, get fixed back up and make it back to work, so I have to do it after work.  And we always have a chance of storms in the evening, so I don’t want to run the risk I miss out on my cardio, so I usually just do my cardio inside over my lunch break.

Almost almost Friday!  Unfortunately this weekend is looking to be as busy as last weekend.  How I wish to have unplanned, free blocks of time!

On to the food.

Breakfast
I had ole trusty today, oats.  1/2 cup of oats, 1/2 cup of water, 2T of raisins, some cinnamon and 1/4 cup of liquid egg whites.  Cooked at 40% power for 4 and 1/2 minutes.  I love doing it this way because it never boils over.  I don’t have to watch it.  I sprinkled in about 1T of flax seed and 1.5T of shredded coconut.  The coconut is the perfect amount of sweetness without being overbearing.

I was going to have a plum with my breakfast but I decided I was full after eating this, so I just skipped the plum.

AM Snack
Switched it up a bit today.  Went for the kefir with Kashi Go Lean Crunch. I love this cereal by itself!  For some reason I am not a fan of it with milk.  I just feel the consistencies do not mix well.  I would rather just eat it try and enjoy all of its crunchy goodness.   The container with the Kashi is 1/4 cup.

Part of me kind of wishes I could wear that outfit to the gym!  Belt, leotard, those socks, the 1980’s white sneakers.  And the hair….  H-O-T!




Summary



About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
