Skimpy Toga outfit here I come

Sheesh.  Just what I want to do after a nice dinner….but on a barely there piece of cloth.  Hopefully I don’t look as bloated as I feel. :)   I’ll try to remember to take photos.

Today was actually interesting at work.  But that is because they were pulling up the carpet right near where I sit.  Which meant they started to relay the carpet this afternoon.  Carpet laying=glue.  Glue=fumes.  Fumes=feeling high.  And that is how I felt this afternoon.  We all felt sort of woozy.  I could have left and worked from home, but well….it is a gorgeous Friday afternoon.  If I had left that office there is no chance I would have gone home to work.  That is asking for the dedication of a saint, which I am not.  So I was the dedicated employee and stayed until the end of the day.

This morning some one brought in these HUGE grapes (I think they were grapes but they could have been baby plums because they had a pit).

I could have eaten a pound of these.  Good thing there was someone in the break room when I was grabbing them because otherwise I may have taken all of them. :)

Workout
I went to the gym over lunch (obviously) and because my knee is still acting up, I decided I had to do the bike again.

Yeah, I know, I skipped the cool down.  I would rather get a longer amount of harder cardio and just count my shower/getting dress/going back to work as my cool down most days.

Okay, so I noticed a situation at the gym today that made my chuckle that made me want to share.  While I was on the bike, one of my co-workers came into the gym with another co-worker.  Both adult (at least 50) men.  They obviously came to the gym together and they both were doing the treadmill.  So they walk over to the treadmill and had to make sure there was 1 empty treadmill between the two of them.  I just don’t get the male gender some times.  Girls would aim to be next to each other so they could talk, but men are incapable of being right next to one another.  I just kind of laughed to myself when I saw this situation.

Lunch
I was starving when I got to back to work.  Today’s lunch was a slight change up.  I had cut up veggies with hummus (and I made sure to use all the hummus so I didn’t have a pile leftover.)  I had a carrot, squash and zucchini today with the Tribe Hummus.

Then I had a sandwich.  I had half a piece of whole wheat bread with 1T of natural peanut butter and half a banana.  I microwaved it for about 15 seconds to make it all gooey.  It was SO tasty and really felt indulgent.

Then I had my Kozy Shack no-sugar tapioca pudding.  What can I say, it hits the sweet spot!

PM Snack
I think my afternoon high was effecting my eating habits.  I had an amazing peach.  This thing was beyond perfect.  I think if I had waited until tomorrow then it may have gone bad but today was the peak of juicy, sweet perfection.  Then I had some cottage cheese.  I ran out so I had less than usual.

and because I didn’t get much cottage cheese and I decided I needed a diet Dr. Pepper, I went down to the little cafe in my office.  And while buying my Diet D.P., I got this little goodie:

Left work and seemed to do a ton of chores.  Made posters for the yard sale.  I should have taken a picture.  I shamefully turn making yard sale posters into a competition.  Apparently there are 21349235 different yard sales in my neighborhood tomorrow, so I felt the need to make the best posters.  They include multiple colors, bubble letters and I probably would have broken out glitter if I had had any.  I feel like people are going to come tomorrow and ask were the 13 year old who made the signs is.

After going and hanging up the signs, going to the store and then the bank, we FINALLY got home for dinner.

And then the cooking began.

Tonight we had a filet of fish that Justin caught last week (it had been vacuum-sealed since then in the freezer).  It was a mahi-mahi that he and his dad caught while out on their boat.  I cooked the filet with salt, pepper, fresh lemon juice, red pepper and honey.  I cooked on a hot non-stick skillet for 4 minutes a side (cooked with one side having the skin on it.  It peeled right off after I finished cooking it.).  I had less than 3 ounces of filet.

Then I sliced up 1/2 inch pieces of polenta that I bought tonight and cooked it on a skillet with a little soybean oil.  I cooked it for 5 minutes a side.  After it was done, I placed a small amount of cheese (maytag and blue) on top of the slices and broiled them, then sprinkled with cilantro.  I ended up taking the blue cheese off the pieces that had it.  It was just TOO strong and masked the other flavors of the dish.

Underneath the polenta is a black bean purée.  I just used canned black beans (ugh! but I hadn’t planned this meal out!) mashed up with a splash of light soy milk, cilantro and s&p. 

Then we had a mixture of cucumbers, tomatoes, onions, garlic, cilantro, salt, pepper, white balsamic vinegar and honey.  Always a great summer night staple.

It is Michelob Ultra pomegranate raspberry.  I had never tried it before (I had the cactus lime and hated it!) and these weren’t too bad.  A bit over fizzy and definitely ‘girlie’ but that was the flavor I was going for.  Something light tasting.

Okay, time for me to some how turn a piece of fabric into a toga.  Wish me luck.  Have a wonderful Friday evening.  I will be up bright and early at 6AM (not what I want to do on my Saturday) for this yard sale.  Hopefully we will make lots of $$.  With that said, I need to watch how much I drink and how late I stay out tonight so I am not a zombie tomorrow.

R.D.C.V.

I probably could use T.G.I.F. as my title every Friday morning, but well, that would get boring.  So I went for the french translation–Remerciez Dieu c’est vendredi (R.D.C.V.) but I honestly do not think the french use this at all.  RDCV doesn’t have nearly the ring to it that TGIF does.  Okay, sorry for my terrible sense of humor this morning, I’m still waiting for the caffeine from my coffee to kick in.

Last night after getting things ready for tomorrow and abs, I did have an evening snack.

That is a mixture of Annie’s Chocolate Chip bunnies, some chocolate chips, some kashi go lean crunch and some dried fruit.  In the small mason jar is about 1/4 cup of light soy milk.  I have been craving ice cold milk lately.  There is just something about it that really quenches my thirst.

This morning I woke up and weighed myself.  I don’t think I told you guys but last Thursday I weighed myself and I weighed the exact same (to the tenth) that I had the week before.  Today I was down .5lbs from last week.  I don’t know if I am surprised or not.  I am trying not to set a goal or an aim for weight loss.  I look pretty decent in a bathing suit and I can ride a bike for 90 minutes once a week without any problem, so I am assuming I am pretty healthy.  I am just interested to see where my body wants to be while I am feeding it whole grain, healthy, natural nourishing things.

EEEEEEP!  I just noticed that I forgot my wedding rings today.  I never do that.  It feels bizarre and I know I will feel self conscious about it all day.  I don’t like not having them on!

Breakfast
So I broke out of the box today and tried something new for breakfast.  I usually am not experimental for breakfast because I don’t have much time and I don’t want to be let down that early in the morning.  But today I mixed together 1/4 cup of quick oats with 1/4 cup of normal oats.  I mixed this with 1/3 cup of liquid egg whites plus water to equal 1/2 cup.  I stirred in some cinnamon and a bit of baking powder. I let this mixture sit for about 30 minutes to let the oats absorb the liquid.

Then I split this into 2 lumps and cooked them on a hot non-stick griddle for about 4 minutes a side.

I then spread apple butter, 1/2T of flax seed and some raisins on one.

On the other one I spread all natural plum jam with another 1/2T of flax seed.

Because I was running so late, I had to take these to go with me and eat on the ride to work.

Reviews
The consistency was actually really good.  They held together amazingly and were cooked all the way through.  They felt very dense and filling.  I was not a huge fan of the apple butter one.  I don’t know why but I tasted the eggs A LOT more in this one than the other one, which made the sweetness of the AB and raisins a little off setting.  After eating this one, I thought this creation would be much better with cheese and maybe a slice of bacon on top.  It was more savory than sweet.

Then I tasted the natural jam one and it was perfection.  No overwhelming egg taste and no offsetting flavor.  The oat pancake mixed perfectly well with the sweetness of the jam.  Glad I finished with this one.  I do think these would be INCREDIBLE with peanut butter!!!!

Now I will see if they keep me as full as long as my normal bowl of oats. 

AM Snack
I had something totally different planned for my morning snack but because I was running late and obviously disheveled (i.e. forgetting my wedding rings), I went for something boring.  Kefir and Kashi Go Lean.  I used up the last of my kefir. :(

That’s about 3/4 a cup of non-fat kefir with 1/4 cup of Kashi Go Lean.

Okay, and this may be cheesy, but I found it really heartwarming and sweet.  (Please disregard the background music.  I think that is what giving it the cheesiness…that and the finally message.) But anyway…




Summary



About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
