Busy Bee

Today was busy, busy!  Meant it went really quickly, so that is nice.  I am going to sleep like a baby tonight.

Workout #1
Went to the gym over my lunch break and lifted.

This took me about 40 minutes.

Lunch
I was definitely ready to eat when I got back to the office.  And what a tasty lunch full of fresh veggies.  I started with a salad of spinach, one hard boiled egg white, about 2T of black beans, some chopped up zucchini, onions and carrots.  I put about 1T of Newman’s Light Honey Mustard dressing on top.

I sort of wished I just had had a huge salad for lunch because this thing was so clean and refreshing.  It hit the spot.

Then I had a sandwich of 100% whole wheat bread, 1 light laughing cow cheese wedge, tomato slices, some cucumber and some sprouts.  At least I had a bunch of veggies on my sandwich to sort of make up for not having a massive salad.

Then I had my trust Kozy Shack no-sugar added tapioca.  And I forgot to buy more of these this week at the store.  EEEEP!  Maybe I’ll make some jello mixed with fruit tonight as a replacement.  Anyway….

PM Snack
I actually could have skipped my afternoon snack.  It was quarter to 5 and I still hadn’t gotten hungry, but I knew I was going back to the gym, so I ate it anyway.  I never know if this is a good decision or not.  Do I fuel the body or just recognize that it was all that hungry?

This is just some Kashi Go Lean crunch with some dried fruit and 1/2 cup of cottage cheese.

Workout #2
Luckily the rain went away and I was able to get into the pool tonight. 

Drill Time
Warmup- 8 X 25M Freestyle 10 second recovery/per 25
6 X 50M Single Arm with Fins (6 strokes left arm, 6 strokes right arm, 6 strokes full stroke) 15 second recovery/ per 50
4 X 100M Freestyle Swim (60-70% Heart Rate) 20 second recovery/ per 100
4 X 100M Freestyle Swim with Paddles (60-70% Heart Rate) 20 second recovery/ per 100
Cooldown: 2 X 50M Freestyle Push & Glide 15 second recovery
Cooldown: 2 X 50M Freestyle Easy 15 second recovery
TOTAL: 1500 Meters  
Time: Right at 40 minutes  

I think my left arm really wanted to just give up and fall off during the swim.  That weakling wanted to quit, but I talked it into pushing through.  I am beat after all this working out!

On the drive home, I had this little guy:

Chocolate Chip Peanut Crunch Clif Bar.  It was good but I am beginning to think I like the fruit flavors more, they aren’t as overwhelmingly sweet.

Dinner
I had some 96% fat free ground beef in the fridge that I wanted to use tonight.  And I have a craving for some comforting Mexican flavors, so this is what I came up with.

1lb 96% ground beef
1 carrot
3/4 a zucchini
1/4 red onion
1/3 cup of Newman’s Salsa
2 medium tomatoes
1 garlic clove
1tsp cumin
1tsp oregano
1tsp chili powder
1T fresh cilantro
3T all purpose flour
1/3 cup water

I got to use this lovely new kitchen accessory and enjoyed (wow, I’m a dork!)

(if only my nails looked that good!)

I browned the beef with the minced garlic clove and the spices in a non-stick skillet.  Once browned, I added the onion, carrots, zucchini and tomatoes.  I let this simmer for a few minutes and then added the salsa and cilantro.  I covered the skillet and let it simmer for about 10 minutes.  In another bowl I mixed the flour and water together.  I added this to the mixture and let this cook for about 3 minutes in the beef mixture uncovered.

On the side I cooked some brown rice and cut up some whole wheat tortillas.  I broiled the tortillas with a spray of soybean oil from this also lovely Pampered Chef purchase.

 

Anyway, back to dinner.  I had about 1/2 cup of brown rice with 1/2 cup of the beef mixture.  I sprinkled some mozzarella cheese on top and served with some tortilla chips on the side.  Oh yeah and about 1T of plain fage yogurt.  I didn’t tell the husband that was yogurt and just let him assume it was sour cream (we are all out of s.c) and he never seemed to notice.  I felt sneaky.  (back to me being a dork.)

Dinner was REALLY REALLY good.  It hit the spot.  You may be seeing some leftover tomorrow during lunch because I don’t think I can let Justin have all of this goodness.

Someone sent this to me at work today and it cracked me up.  Warning–the end gets a bit extreme/violent, but none the less…this is humorous.

Okay, watching the end of the Tour from today (I know, surprise, surprise.) Tomorrow is a day off, so you don’t have to hear about it from me. :)   Anyway, I am planning on doing abs tonight (Exercise TV here we come!).  I probably will have a little something sweet before I go to bed.

    When I went to visit my friends in ATL they had one of those “meat mashers” and I was so jealous!! I want one! :-)

    Chandra: Justin cannot understand why in the world I find the ‘meat masher’ necessary. Ummm, because it is simply fun to use.

About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
