Today was so hectic I was unable to do all my blog reading. I guess that is why they pay me to be in the office….to work. It was a good day, albeit hectic.
Workout
I went to the gym and started doing intervals on the elliptical and then decided I didn’t feel like doing them. I ended up doing the elliptical set to level 6 with an incline of 3.0 for 40 minutes. I need to figure out a day this week that I am going to take off from working out but I just don’t feel like. I know my knee (and the rest of my muscles) need the break.
Lunch
This definitely was a ‘use what ever you can find in the fridge’ lunch. I basically just had a salad. I had spinach (that was starting to get iffy) and threw in some mixed nuts, zucchini, sprouts, raisins, tomatoes.
I poured on about 1T of Ken’s Light Blue Cheese before I ate it.
I had a few Mary’s Go Crackers on the side and a no-sugar added rice pudding.
I don’t think this was enough food after a workout, maybe it was just missing on protein because I felt snacky all afternoon.
PM Snack
I had about 1/2 cup of cottage cheese with Kashi Go Lean Crunch, dried fruit and chocolate chips. Yumyum!! I forgot to take one of my Yogi Tea bags to work. I really missed my afternoon cup of tea!!
I also snacked on this throughout the afternoon because I was definitely still hungry. It was a mini box of cheerios that I got as a free sample. They were good!
I had to basically run out of the door right at 5. Just threw down my pen and said “I’m out” because I had to make it to PT by 5:30. Physical Therapy was okay. I did feel like they were trying to rush me out of there because I was one of the last patients of the days. We did a lot of single legged exercises with the trampoline and stretch bands. I would have liked to spend a bit more time in there and take things a little slower. My leg was shaking and very weak by the time I left, so I guess I did enough.
I went to the grocery store after PT and because it was about 7PM and I had just left PT, I was STARVING. I think I probably ate half a pound of red seedless grapes while wandering through the store. Oh well!
Is it bad that I thought this was a good idea because it meant my grapes cost less? Yes Alan, that is what we call stealing. Oooops!
Dinner
There was some tuna (one 6 ounces filet) and sea scallops (6 total) on sale so I thought we should have those for dinner tonight.
I seasoned the scallops with simply salt and pepper and the ahi tuna with salt, pepper, crushed red pepper, and Italian seasoning. I seared them in a VERY hot pan with a bit of soybean oil for about 2-2 1/2 minutes a side.
I steamed fresh green beans (about a cup) and 1 carrot in a bit of water. I microwaved 2 small red skin potatoes for 10 minutes and then put them under the broiler to give them a good skin.
I also bought a pre-washed ’shell’ of arugula (5 ounces) because I knew I was feeling too lazy to wash and spin dry lettuce. Lazy, I know.
I put the arugula into a big wooden bowl we got (Thanks Allie for the great wedding gift!) and put the green beans, about 8 halved grapes tomatoes, about 10 halved olives and the carrot on top. Then I added the thin sliced tuna and scallops. I thought it looked fabulous and it definitely lived up to it’s taste!!
I made a little cucumber-dill dressing with a Caribbean twist. I used this mango pepper marinade/dressing (about 2T) that I found at the store tonight (all natural ingredients!) and chopped up about 1/4 of a cucumber thinly and about a tsp of dill. I added about 2T of fage and 1T of balsamic vinegar. It turned out just like I wanted.
Here is my first bowl. I also cooked up this whole wheat rosemary rolls that I found at the store tonight. I took about 1/3 of it.
I had to have more because this thing was incredible. The tuna was down right perfection!
I had two bowls and Justin had at least three. I felt pretty full. Justin and I are about to go for a walk and maybe should do abs tonight. I am interested to see if I get hungry before bed time or if this salad holds me over.
