I don’t know what is going on this morning, but I am just go-go-go…and with a little skip in my step. I wish I woke up every morning with this much motivation. I have already done laundry before work and then when I got in here I managed to do all the busy work that has been piling up on my desk for about 3 weeks. Now I have a nice spacious desk ready for new paperwork to cover in.
My knee did wake me up during the night and the ibuprofen was upstairs and I really didn’t feel like going upstairs in the middle of the night. I tried propping it up on a pillow and I think that helped. GRRR. I am ready for that thing to just be normal!!
Last night Justin and I went for a walk. I had a piece of taffy while we were walking out the door. I am thinking I probably won’t put any more taffy photos up out of the wrapper because, well that thing looks just gross!
After the walk, I had a little snack before bed. A little bit of Kashi Go Lean and some Golden Grahams. I had about 1/2 cup of light soy milk with some blueberries mashed in. You guys should be surprised you don’t see cereal like Golden Grahams more often! Justin eats tasty sugary kids cereal all the time. I luckily have built up some self restraint but I do have a little place in my heart for things like Lucky Charms, Golden Grahams, Sugar Smacks, Captain Crunch…okay, all cereals.
Breakfast
After I got home from the grocery store last night, I noticed the box of bulk oats that I had purchased. I bought 30 servings worth of quick oats. UGH! I decided that I would be taking it back today. I already have a small canister of quick oats and I don’t even like using them, much less need a bulk quantitity.
But, I had to use the quick oats this morning (the canister already open). I put 1/2 cup of oats with 3/4 cup of water and 1/4 cup of liquid oats. I mixed in blueberries. I cooked it for 2 1/2 minutes on 100% power. Afterwards I mixed in 1T of flax seed, a splash of soy milk and then about 1T of shredded coconut. I LOVE coconut in my oats. MMMMM, it was the best way to start the day.
AM Snack
I bought some more edamame yesterday at the store so I threw 1/2 a cup into a container to snack on later this morning.
I am planning on going to the gym to lift over lunch today and then hopefully can swim tonight after work. It is so HOT and HUMID outside today that I am worried it will storm by 5PM and I won’t be able to swim. I’ll just do the elliptical or something else inside, but I am definitely CRAVING a swim!!

cereal is my weakness. Quaker oatmeal squares are my favorite, but they are like $5 a box, and i can easily eat a whole box in one sitting so i RARELY buy them. They are dangerous.

Oh, the heat and humidity is KILLING ME, for sure! It was miserable this morning when I was walking to the metro.
Quick oats? I agree…no way! I like the old-fashioned kind.
Kashi Go-Lean is my most favorite cereal ever!

I love coconut in oats. I use Artisana coconut butter. It’s like peanut butter made with coconut meat. I swirl it in with freshly grated ginger.

Every Gym’s Nightmare: I have only had quaker oatmeal squares once. And that was because I was out camping with a bunch of friends (actually, we were at Meryl Fest–a bluegrass festival in NC) anyway. Someone brought the box and I proceeded to eat the whole thing. I wouldn’t share. I didn’t want anything else to eat. Just Quaker Oatmeal Squares. I think I have avoid them both out of shame of this situation and fear of their appeal.
Foodie: I stick to Kashi but that doesn’t mean I don’t still LOVE LOVE LOVE sugary cereals. They are dessert in a box.
Zandria: It is insane how humid it was this morning! I broke a sweat putting my makeup on. Needless to say, mascara and sweat aren’t a good combination. We got a KILLER storm around 11 so hopefully that will cool things down a bit. And Quick Oats…I just don’t even understand why they exist…you can cook old fashion ones in the microwave in about 3 minutes.
Jenn: Productive morning apparently is leading to unproductive afternoon. Hopefully I’ll get hit by the motivation bug soon.
Maggie: Coconut…ginger…peanut butter. That sounds BEYOND amazing. I have fresh ginger at home rigth now. I may have to take swing at this combination some time this week.
totaltransformation: It does not. It taste like fabulous soft beans and you get the added excitment of extracting them from the pod. I like anything that slows down my rate of consumption.

Sadly, they are the only bean which doesn bestow the flatulence upon their recipients. So they don’t taste good and they don’t give me the ability to frustrate and gross out my wife- no on both counts.

Faye: Thank you!!! I do mix the liquid egg whites into the oatmeal before I cook it. It makes it much thicker, almost like bread. It is amazing. I can’t go back! And it is a great way to get some protein!
Totaltransformation: I agree about pistachios except when you get one of those little guys that just doesn’t want to open despite the fact you are cracking your teeth to get into it.
