Splendid Saturday

Happy weekend!

I love weekends where I have nothing planned at all.  And we specifically turned down invitations to things this weekend so we could have exactly that….a unscheduled summer weekend.  The only thing on the books is a bike ride both mornings, a viewing of the Dark Knight tonight, a Target run at one point and a soccer game for Just on Sunday…I may try to go lift while he is playing soccer.  I think this sounds like perfect heaven.  Who says you have to pay big bucks and go on a vacation to have a fabulous weekend? 

I did manage to go back to the gym last night and swim.  It was a wonderful workout too.  I think all your comments motivated me to feel proud of my body and to feel strong and muscular.  So I really tried to push myself and use all those nice muscles.  I never got hungry yesterday afternoon (maybe it was the drink?) but I knew I needed a little something to power me through a good workout, so I ate this a little before heading to the gym

After I left the gym and picked up Just, we went to our favorite friday night spot.  Red, White and Bleu for wine tasting.  We love the guys that own this place!  Anyway, I am going to write a whole other post to review the wines and such.  We did buy a bottle of white for dinner, which helped decide what we wanted to make…seafood obviously!

Dinner

Dinner was fairly simple because it was late and we were famished.  We went to the store and got all the necessities and here is what I made.

Sautéed shrimp and chicken sausage (sun-dried tomato) with some pine nuts, a little parsley and a bit of soybean oil spray.  I topped it off with some onion feta.

Boiled some corn in water/milk for about 5-7 minutes.  Oh, I had to show you guys this.  When I was shucking the corn, look what I found.

My corn had a baby corn!  I had never seen this before but Just said it was typical and didn’t see why I was so amused by this.  What can I say, I am easily entertained.

Lastly, I had grabbed someUgly Tomatoes” at the store (heirlooms) and sliced them up and topped them with balsamic vinegar, salt and pepper.  I was really sad to discover that my basil plant has decided to give up fighting all the heat and die.  I am hoping I may be able to nurse it back to life.

I also had a piece of garlic bread with dinner last night.  It was fabulous garlic bread, not the kind with sketchy clumps of garlic on top.  It simply was a small loaf/roll of bread that had whole garlic cloves baked in.  It had a great crust and was so warm and fluffy inside.  I probably had a 2 1/2-3 inch chunk.  I thought I had taken a photo, but I guess it disappeared.

This wine (Grillo) was the perfect pairing with dinner.  It held up its flavors against the flavors of the sausage and shrimp but it didn’t overwhelm or contrast.  Just a perfect summer sipping wine with a seafood dinner.

After dinner, we laid on the floor and watched In the Land of Women.  I have to say, I adore Adam Brody. It was a very amusing and entertaining Friday night at home movie!  Just. had a few of these while we laid on the floor and I probably sipped off 3/4 of a whole bottle during the course of dinner.

I woke up this morning feeling a bit bloated.  I think it was probably all the wine drinking and that beer.  I hate waking up feeling bloated.  It makes it tough for me to eat anything or start my day until it goes away.  But, we are going for a bike ride and I knew that I should eat something before we hit the road, so I had a little snack.  I couldn’t decide what I wanted, so I just threw a few different things in a little bowl.  Some frosted mini wheats, a small piece of graham cracker, some dried fruit and about 1 tsp of natural peanut butter.  I had this with a little glass of light soy milk on the side.

And on the road we go!  Time to enjoy as much sunshine outside today as possible.




Summary



About Me: 28-year old, fairly newlywed (Spring 2007) that lives in Northern VA. Work full time, love my job, have an unfortunately long daily commute.

While an obsessive long distance runner, I am still trying to recover from 2 major knee surgeries. Atleast I am able to (semi) run again.

In the past, I definitely have not always fed my body correctly to support all the running I did. Simply put, my aim was to be the smallest weight/size possible. Now, my aim is to eat healthy, well rounded and simply to enjoy as much of life without worry about the calorie content and what the tenth of a pound the scale is showing me.
