The best way I can imagine to cap off this Tuesday is to go to bed as soon as possible. I have been fighting a headache for about 2hours and no matter how much water I drink (or handful of cheerios I eat), I simply cannot seem to shake it. I think it is a lack of sleep headache.
When I got back from the store and post office, I decided to make a snack. I popped 30g of popcorn kernels (100 calories) on the stove. After it was done, I added some cumin, chili powder and some of the mango dressing. It was like a Caribbean Tex-mex popcorn. It was good, if not messy!
I had a few nuts and about 3 handfuls of cheerios right around the time I started making dinner. (Trying to kick the headache.)
So here is how the to-do list ended up:

Maybe I’ll do the thank you notes in bed. In general, I call today a success. And my dinner was definitely no exception.
Dinner
I decided that I wanted to make meatballs with the 90% lean ground beef that we had. I mixed the 1lb of beef with 1 egg, 1/2 cup of ground up all-bran, 3T of bread crumbs, 1T of fresh parsley, 2T of fresh oregano, 2T of fresh basil. Then I added 2 garlic cloves and some S&P. I rolled this out into a TON of little balls.
I baked these for about 25 minutes at 400 degrees. I turned them once around 17 minutes.
I had 2 bags of shiritaki noodles that were going to expire next week, so I decided I would use those. I rinsed them really well and then put them in a skillet to help get all the water off them. Then I cut them up.
We had a bag of ragu pre-made microwave pasta sauce that I put into a sauce pan on the stove and added some celery, carrots, red bell pepper and 2 tomatoes to it to give it a less watery texture. I then added the meatballs to the pasta sauce.
That is 1/2 cup of pasta sauce and there are 8 meatballs hidden in there. After the first bite, I did end up adding a little bit of goat cheese to give it a little more flavor.
On the side I had an arugula salad with some cherry tomatoes and Green Goddess dressing (surprising, I know!)
I also had half of a sandwich thin (they are so yummy!) with some basil and about 1T of mozzarella cheese.

Time to clean up the kitchen and then I am heading downstairs. My head is screaming for sleep!

mmmm homemade meatballs are the best. and that popcorn looks like carmel corn. wither way, I want some now.

Yeeeahh Shirataki!! What a great way to use them with the flavor of homemade meatballs. I had no idea meatballs were that easy to make either. I don’t often buy ground meat but I really love it when my family has it at home, so I really should start buying it myself. It’s really versatile and can be used in so many different dinners!

eatingbender: I feel like I never see shirataki on these blogs. What an amazing (but not quite the same) form of pasta. I like big plates of noodles…I simply can’t do that with regular pasta because it adds up to like 500 cals in no time!!! I like lean ground beef, lean chicken and lean turkey. It really is so versatile. Hamburgers, bolognese sauce, meat balls, tacos, i can go on and on!
