Sheesh, this weekend flew by. Today really flew by!! We woke up this morning late (how great it was to sleep in!!) and went and took Kristen out to brunch. We went to our favorite brunch place in the world, Gillie’s. This restaurant is beyond incredible. They were actually feature in this month’s Shape magazine. Anyway, eating here usually comes with a long wait, but today we got a table outside almost immediately. But the food always takes a long time, but that is okay when it is this good. (sorry, no photos. I completely forgot)
I had a small glass of fresh carrot juice and a bowl of hot oats (said they were vegan, so I knew they weren’t made with milk, which is always why I avoid ordering oats out.) and I got them ‘full loaded’ which meant brown sugar, almonds, cinnamon and raisins. On the side, it came with a fabulous southern style homemade biscuit, which I had no shame in consuming.
While we were eating, we noticed that Angela Tincher was also at the restaurant. My little softball loving sister-in-law seemed to think this was as exciting as if I got to meet Lance Armstrong.
After brunch, we took Kristen back to her dorm and saw her dorm room (looks like every other dorm room at VT–small!) and we met her roommate. Then we went back to my Mom’s, packed and hit the road. Half way home we stopped to get gas and I got another frozen latte at Sheetz. Okay, so I did a little more research into this drink because I knew it tasted WAY TOO GOOD to be 101 calories like things I read online. Finally I discovered that this 16 ounce, skim milk, sugar-free caramel flavored, no whip drink actually has 250 calories. UGH! It does taste amazing though!
And I bought a banana, but I was too full after drinking this that I didn’t eat it. But Justin did get some fritos and I snacked on a few of those.
We figured we might as well stop by the house on the way home because we knew that the appliances had been put in. It was GORGEOUS!! The granite had been put in and most of the appliances were there (they don’t put in the ones that can be taken up until right when we move in.). We are still waiting on the hardwood floor and then things like lights, mirror, doorhandles, etc.
I was overwhelmed when I saw the kitchen.
(ignore the plastic wrap, it is to protect the granite). I have never had more than like a 2ft by 2ft space of countertop. I won’t know what to do with all of that!
After going through the house, we went to Wegman’s. We got out of there with some extra things and still not really going over the weekly budget. I was proud! I am really going to miss all the fresh produce of the summer!
Then I had Justin drop me off at the gym for a quick workout. All day I had planned on doing a 40 minute cardio session and then a lifting session. Well thanks to the time we spent at the house and at Wegman’s, I was only able to get 32 minutes in at on the Cardio Wave. To get another few minutes of cardio, I called Justin and said that I would run to his office (he went to work while I was at the gym. Crazy—going to work on a Sunday. He is dedicated!) which was another 8 minutes of jogging. So at least I got in my 40 minutes of cardio!
Dinner was a quick meal because it was late, and we both wanted something light.
South Western Chicken Salad
I cooked plain chicken breast and added it to about 3 cups of lettuce and then added 2T black beans, 2T wheat berries, half a carrot, 2T avocado, 2T corn and 1/4 of a tomato to it. I put some BBQ sauce on the chicken and then added some salad dressing and some sour cream. It was fabulous and hit the spot!
I added some oregano, cumin and a lime wedge to it.
I probably could eat this every night. Perfect end of weekend dinner!
Okay, I must sleep. This week is going to be crazy, just like all the past one’s. Maybe I should quit saying that and accept that this is my new normal for awhile.






It must be so exciting, seeing your house come together like that. (And yes, that is a HUGE kitchen. It’s great!!!)

annaalstondonnelly: I feel the exact same way. It is house porn. I drool when I see it. And have to keep reminding myself that it is mine (well, mine and the hubbies.)

GORGEOUS kitchen! Love the cabinets and countertops. I always tell myself that if I had a cool kitchen like all of the Food Network people, I would cook more. Maybe one day I will see if that’s true.
And that salad has my mouth seriously watering.
